Cool and Healthy Cucumbers

The humble cucumber. Abundant and inexpensive. Who knew it has such a multitude of health benefits? My uncle who lives in rural Wisconsin, who eats mostly meat and potatoes, grows a beautiful garden in season. When visting, I was surprised to find him eating a bowl of this humble “salad” which resembled salsa. He offered me a dish and I was hooked on every fresh crunchy spoonful. I asked, “What did you put in this?” He said “Nothing, just chopped up cucumber, radishes and tomatoes…oh and some salt and pepper”.

Time went on. The next time I saw him I asked again. “Remember that salad you made? What did you put in that salad?” It was just too simple to be true. I just made it today in his same no fuss way. I think it’s all in the chopping of the vegetables in a diced shape. I added a squeeze of lemon just because.
So this is a “no recipe” recipe. Chop up cucumbers, radishes, tomato. Add salt and pepper and if you like a squeeze of fresh lemon.
It would also make a great salsa! Just add lemon or lime juice, diced jalapeno, diced onion and chopped cilantro.
