Cauliflower Rice

In effort to reduce grains at our house, I tried the latest sensation, “Cauliflower Rice”. All I can say is we LOVE it. There is no rice in it. The cauliflower pulsed in a food processor or high speed blender like a Vita-mix cuts the florets into the consistency of grains of rice.
The “recipe” is simple and the variations as wide as your imagination.
Cauliflower Rice
1 head of cauliflower cut into florets
1 Tbsp. olive oil, + 1 Tbsp. of butter
Good quality celtic salt or himalayan salt and freshly ground pepper to taste
Saute for a few minutes until it softens a bit. You can take it further to a golden color if you like. All a personal taste.
Variations:
– Saute garlic and onion in the pan before you add the cauliflower for added depth of flavor
– Add shredded carrots, peas, onion, garlic, soy sauce, ginger, scrambled egg for a “Fried Rice”
– Add chopped cilantro and juice of a lime for a Mexican (Chipotle restaurant) twist
Health Benefits:
You’ll want to include cauliflower as one of the cruciferous vegetables you eat on a regular basis if you want to receive the fantastic health benefits provided by the cruciferous vegetable family.
