Healthy Banana Cookies

Healthy Banana Cookies

These healthy banana cookies are a favorite treat at our house.  Perfect for lunch bags or after school treat.  No added sugar.  The sweetness comes from the ripe bananas!  Packed with protein from almond meal and easy to adapt to whatever mix-ins you like or have in your pantry.

Healthy Banana Cookies

3 large ripe bananas

1 tsp. vanilla
1/4. organic cold pressed coconut oil (if solid warm it a bit so it’s liquid)
2 c. old fashioned rolled oats
2/3 c. almond meal (I use Trader Joe’s)
1/3 c. unsweetened coconut, finely shredded*
1 tsp. cinnamon
1/2 tsp. sea salt
1 tsp. baking powder
6 to 7 oz. good chocolate (chips or break up a bar)
Preheat oven to 350 degrees.
Mash bananas.  Add vanilla and coconut oil to bananas in a bowl and set aside.  In another bowl combine dry ingredients (except chocolate pieces) Add dry ingredients to wet, combined until well blended.  Fold in chocolate pieces.  The dough will be moist.
Using a small cookie scoop, drop dough onto parchment lined baking sheet, an inch apart.  Bake for about 15 min. (ovens vary)
Makes about 3 dozen cookies

*If you don’t have coconut on hand, substitute toasted nuts or dried fruit of your choice.  I didn’t have any coconut in the cookies pictured above, so I mixed in some toasted chopped almonds.
