Vegetables For Breakfast

Start your day right. Begin with LOTS of vegetables. I love to put them in smoothies with Shaklee Life Shake, but some days you just want an egg! Here is an idea I learned from David’s grandmother years ago.

Fresh spinach is the base and a couple of eggs cracked on top and basted is all it is. I embellished it with onions, garlic and mushrooms because it only makes it better if you happen to have them on hand.

This actually works with any and all vegetables. Leftovers especially good because it’s quick! Roasted sweet potatoes, peppers, fennel, artichokes, cauliflower rice, you name it, but I do love having some dark leafy green in there somewhere.

Saute (or just heat up pre-cooked vegetables) in some butter and olive oil (a mix of the two works well)

Crack a couple fresh eggs on top. Season with quality salt and pepper (it makes a difference, try sea salt or himalayan)

Put a bit of hot water in the pan (from your tea kettle after you make your Shaklee green tea)

Cover. Cook until the egg whites are cooked and the yolk is the way you like it.

Pile in the vegetables!! This way you can skip the toast and eat a ton of food without guilt. You’ve now started your day off with a good amount of servings of vegetables under your belt.

Top with anything you like. Hot sauce, sambal, crispy shallots, jalapenos use your imagination.
